2023 Member Picnic – Palate Pleaser Winner: Susan Jackson / Entry: Rubye’s Cherry Crunch
Club Member Susan’s love of gardening came from her grandmother, Libby and her mother, Rubye but culinary delight was a strong influence in her life as well. The first time Rubye prepared cherry crunch with vanilla ice cream, Susan became an immediate fan – much like several of our club members who also raved about this dessert! Try your hand at this if you dare!
Rubye’s Cherry Crunch
- 8×13” Pyrex dish
- Pam or generic
- White cake mix
- 2 cans of cherry pie filling
- 1 stick margarine (straight from the fridge)
- 1/2 cup chopped pecans
- Vanilla ice cream
- Instructions:
- Spray the pan and set the oven to 350 degrees.
- Spread two cans of cherry filling on the bottom.
- Sprinkle dry cake mix evenly over the top of the filling.
- Sprinkle pecans evenly over the cake mix.
- Slice thin pats of margarine, place about an inch apart over the pecans / cake mix. (The margarine melts and creates the crust).
- Bake at 350 degrees for 45 minutes or until the crust has a slight golden color.
- Serve warm with ice cream.
